Event Schedule:
Monday 22nd April, 2024
Check in from 4pm at "Castello di Ristonchi", our home for the week. We'll start the week off with a welcome Aperitivo and pizza making party for dinner.
Tuesday 23rd April, 2024
After breakfast, we'll have a 3-hour workshop with one of our herbal teachers. We'll have a break for lunch and then another opportunity to learn from an experienced herbalist with a 3-hour class.
Wednesday 24th April, 2024
After breakfast, we'll start the day with a workshop from our third herbal teacher for the week, followed by a BBQ lunch outside in the Tuscan countryside. During the afternoon we'll enjoy another 3-hour workshop with one of our herbal teachers and have a fun pasta making class to enjoy the process of making dinner together.
Thursday 25th April, 2024
We'll start the day with breakfast and have our final 3-hour herbal workshop in the morning. For lunch, we'll have a relaxed panini truck outside, followed by a foraging and farm walk with Ristonchi olive oil & beer tasting. Finally we'll celebrate our last night together with a formal farm-to-table sunset Tuscan dinner under the night sky.
Friday 26th April, 2024
On the final day, we'll have breakfast and closing note before checkout at 11am.
Practical Information
How much does a ticket cost?
Prices for a single person in a shared room starts at €1800, with different options based on room type. (Discounts are available if you book as a couple or a group of friends who share a room.)
What is included?
The ticket price includes admission to all events during the intensive, all food and lodging for the duration of the event.
What's NOT included?
Travel to the location and flights to Italy are NOT included. We will help to organize transport to the Intensive location with buses (it's in the Tuscan countryside), which will be available for a nominal fee to cover the cost of bus hire and drivers. While tea/coffee will be available during the day and a glass of wine will be provided with dinner, additional drinks at the event will also incur an extra charge.

As an Australian living in Italy, I'm bringing together a handful of the herbalists I admire the most in the world so that we can spend a week immersed in this wonderful craft and learning together, while also enjoying the delights Italy has to offer!
